Whether after a session or on windless days: sometimes all you need is a light, quick dish that won’t send you into a food coma or a kitchen disaster. This recipe for soba – chilled noodles packed with flavour – is exactly that: uncomplicated, ready in under 15 minutes, and the perfect mix of freshness and umami.

🍜 Cold Soba Noodles – in 3 Steps
Ingredients (for 2 servings):

2 portions soba noodles

1 spring onion (halved, cut into 2 pieces)



Seasoning (per bowl):

1 tbsp light soy sauce

1 tbsp sesame oil
-
Freshly ground black pepper

Sesame seeds for garnish (optional)
🥢 Step-by-step:
1. Prepare the spring onion:
Slice both halves of the spring onion into thin rings. Blanch half of them with hot water. Place the rest directly in the serving bowls – this adds freshness & crunch.

2. Cook & cool the soba:
Cook soba noodles for about 3–4 minutes in boiling water. Then drain (preferably in a fine sieve), rinse well under cold running water (up to 1 minute) and toss lightly – this gives a nice chewy texture. Divide into portions.

3. Season & mix:
Season the noodles directly in the bowl with soy sauce, sesame oil and pepper. Add the blanched onions, mix well – optionally top with sesame seeds. That’s it.


💡 Fun fact:
Light soy sauce has more flavour than dark soy sauce. The latter is often used just for colouring and doesn’t have much seasoning power.
