Whether after a session or on a windless day: sometimes all you need is a light, quick dish that won't plunge you into a food coma or kitchen chaos. This recipe for Soba – cold noodles with plenty of flavor – is exactly that: uncomplicated, ready in under 15 minutes, and the perfect mix of freshness and umami.
Sounds like summer, tastes good always.
🍜 Cold Soba Noodles – in 3 steps
Ingredients (for 2 servings):

2 servings soba noodles

1 spring onion (halved, divided into 2 parts)

Seasoning (per bowl):

1 tbsp light soy sauce

1 tbsp sesame oil
-
Freshly ground black pepper

Sesame for garnish (optional)

🥢 Here's how – step by step:
1. Prepare the spring onion:
Cut both halves of the spring onion into fine rings. Blanch one half in hot water. Place the rest directly into the serving bowls – this adds freshness & crunch.

2. Cook and cool the Soba:
Place soba noodles in boiling water for approx. 3–4 minutes. Then drain them (preferably in a fine sieve), rinse well under cold running water (up to 1 minute), and toss lightly – this makes the texture nice and chewy. Divide into portions.

3. Season and mix:
Season the noodles directly in the bowl with soy sauce, sesame oil, and pepper. Add the blanched onions, mix well – optionally top with sesame. That’s it.

💡 Fun Fact to finish:
Light soy sauce has more flavor than dark. The latter is often used only for coloring but has little seasoning power.
